Shredded chicken tortilla recipe. |

Ingredients:
1kg (32 oz) tomato salsa
450g (1lb) chicken, cooked and shredded
340g (12 oz) cheddar cheese, shredded
12 tortillas, gluten free
260g (9 oz) sweetcorn
1 red bell pepper, finely chopped
1 onion, finely chopped
¼ cup coriander, finely chopped
3 tbsp taco seasoning
3 cloves garlic, minced
Black pepper and salt
Recipe:
1/ Mix the bell pepper with chicken, onion, coriander, taco seasoning, ½ cup of cheese and garlic in a large bowl.
2/ Spread ½ of the salsa in the slow cooker pot and lay 6 tortillas on it with ½ the chicken mix, 1/3 of the salsa, and 1 cup of cheese.
3/ Cover them with the rest of the tortillas and spread on it the salsa then cover the pot with the lid and cook for 4 hours on low.
4/ When time is up, sprinkle with the remaining cheese, serve and enjoy.
