Roast pepper and potato recipe. |

Preparation time: 10 minutes
Cooking time: 8 hours
Serves 6 to 8
Ingredients:
2.2kg (5lb) chuck roast beef (shoulder)
2 jars of roasted peppers cut into slices
2 bags of red potato wedges
240ml (8 ½ fl oz) beef stock, gluten free
55g (2oz) Butter
Black pepper and salt
Recipe:
1/ Season the roast with some salt and pepper then place in a slow cooker pot.
2/ Stir in the rest of the ingredients, cover with a lid and cook for 4 hours on high or 8 hours on low.
3/ When time is up, discard all of the fat from the roast.
4/ Serve warm.
