Cheesy chicken and broccoli rice recipe. |

Serves 8
Ingredients:
680g (1 ½ lb) chicken breasts
1 litre (35 fl oz) chicken broth
150g (5 oz) broccoli florets
100g (3 ½ oz) cheddar cheese, shredded
180g (6 oz) long grain rice
1 small onion, chopped finely
1 tbsp olive oil
1 cloves garlic, minced
Black pepper and salt
Recipe:
1/ Combine the rice, chicken, garlic, onion, olive oil along with ½ of the broth and a pinch of salt and pepper in a slow cooker pot, stir, cover with the lid and cook for 3 ½ hours on high.
2/ Once cooked add the broccoli to the pot and cook for a further 30 minutes, adding additional broth if required.
3/ Stir in the cheese and further seasoning if required until the cheese melts.
