Candied Pineapple Chicken Recipe. |

Preparation time: 15 minutes
Cooking time: 4 hours 30 minutes
Serves 6
Ingredients:
900g (2lb) chicken breasts, diced
120g (4oz) Cornflour
120ml (4 fl oz) soy sauce, gluten-free
100g (3 ½ oz) granulated sugar
120ml (4 fl oz) pineapple juice
160ml (5 ½ fl oz ) white wine vinegar
60ml (2 fl oz) water
2 tbsp vegetable oil
4 cloves garlic, minced
¼ tsp ginger powder
Black pepper and salt
Recipe:
1/ Mix ¾ of the cornflour with a pinch of salt and black pepper, then dust chicken pieces in it and set aside.
2/ Heat oil in a skillet and brown the chicken on all sides.
3/ Stir the rest of the ingredients, except the remaining cornflour and water in the slow cooker pot.
4/ Add the chicken, cover with a lid and cook for 4 hours on low.
5/ Whisk the remaining cornflour with the water and stir into the pot.
6/ Cook for a further 20 minutes or until the sauce thickens.
7/ Serve with rice.
